My mom's been in town from Philly spending time with her new granddaughter and helping us around the house with her Thai home cooking! Those of you who follow me on Twitter may know that I had my gallbladder removed on Monday due to pregnancy-induced gallstones {no fun!}. Thankfully, I'm on the mend and doing well...but had to go light with soups and easily digestible foods for the past couple days. With jello being one of those go-to recovery foods, my mom made the Thai version and one of my childhood favorites...coconut custard jello!

It may sound and look odd if you've never tried it, but it tastes like salted caramel and coconut...with the perfect mix of sweet and salty in jello form. It's SO easy to make that I had to share with you guys. Just like regular jello, all you need are these two packets, Coconut Agar and Custard Agar dessert mixes. Follow the directions for each, laying first the coconut into a few small bowls. Let the coconut layer solidify before adding the custard layer, then cut and cube when it's set! It looks pretty fun too! — Joy
