The other night, I had a serious craving for chocolate chip cookies, so Bob made some on the fly {lucky me!}. Since we also had some bacon from the bacon-of-the-month club I gave him for Christmas, I suggested...eh...throwing a little bacon in the already delightful concoction he was whipping up. I've been wanting to try this recipe for a while, but we weren't in the mood to make brown butter. So, for this impromptu version, instead he just added small chunks of dry cured bacon to an existing chocolate chip cookie recipe. Salty, sweet, and savory...it was like mixing a chocolate chip cookie with a bacon biscuit. Totally one of those things I didn't think I needed until I had one...and so, so tasty. Next time, we'll make the chunks a little smaller and maybe crisp them up a bit more too for some added crunchy texture. — Joy
